Chocolate truffles recipe

The new year celebrations are a real opportunity to put on a great spread and to honor your most beautiful tableware by cooking for your family. No need complicated things to enjoy themselves, often the great classics put everyone in agreement.


"At home, it is a tradition to spend even more time than usual cooking from scratch good dishes during Christmas week. And every year, we prepare chocolate truffles together, a beautiful idea for homemade presents for friends."

Here I share my simple recipe for truffles.


The secret lies in the choice of quality ingredients: chocolate must be dark with a minimum of 65% cocoa, and cocoa powder must be sugar-free. Do not miss the honey spoon that participates in the final texture of your truffles. You can also add a small "splash" of alcohol if you like (kirch, amber rum, ... ), as well as spices (cinnamon, ginger, ...) at the end of the mixture.

Start the preparation the night before, it’s even better when you let it rest overnight.



Recipe for the truffles:


- 250 g dark chocolate

- 200 g cream 35% fat

- 1 tablespoon of honey

- 50 g butter

- Cocoa powder 100% (sugar free)

Chop the dark chocolate into small pieces with a large knife, or buy a chocolate in small drops like me.

Heat the cream with butter and honey, when it rises pour it over the chocolate drops.

Wait one minute before starting to mix gently with a spatula, making small rounds always in the same direction in the centre of the bowl.

Be patient, it takes one to two minutes to start seeing the ganache form into a shiny and silky texture.

If you wish, now is the time to add a small sip of alcohol and a pinch of spices.

Finish mixing gently and let stand at room temperature for a few hours in a cool place before putting in the refrigerator for the night.

When the chocolate is harden, you can roll up your sleeves and roll up your truffles with all the little hands available around.

End up rolling them in cocoa powder, then the ideal is to manage to wait until the next day to taste them !


Store them in a box in the fridge for up to a week, but you have to remember to take them out 15 minutes in advance to better appreciate them.
