Recipe for asparagus in the oven

It’s spring and asparagus is in season.
I propose a very simple and fast method of preparation that is always successful: asparagus cooked in the oven.
For this, prefer the finest green asparagus possible.
This dish is suitable as a starter or as an accompaniment to fish or meat.

Wash your asparagus and cut the white part of the stem to keep only the green, if your asparagus are very thin you will not need to peel them, if they are a little thicker it will be necessary to peel at least the base of the stem.
Put your oven to heat to 200°C while you prepare your asparagus, it is important that the oven is already hot when you put them on.
In a large gratin dish, arrange your asparagus and cover with shavings of parmesan, some pepper and just a little fleur de sel (parmesan is already very salty).
Sprinkle generously with your best olive oil and that’s it!
Cook for a few minutes, the time depends on the thickness of your asparagus and
if you prefer them "al dente" or fondant.
Anyway, the cooking does not exceed 10 min, so do not go too far...
Prick an asparagus with a knife to test if cooking suits you.
